Why is the TWIST unique? Don’t let its small size fool you. The TWIST was created without compromise. Designed and engineered by coffee geeks and pneumatics experts in Los Gatos, California, the TWIST's technology is hidden carefully inside the handle, providing the secret sauce to its amazing performance. Years of careful design and engineering has seen the TWIST hailed as one of the biggest breakthroughs in espresso production in over 50 years. Here's how it works.

Espresso requires pressure, heat, water and ground coffee. Get them right, and you have yourself a perfect drink. Get them wrong, and you might as well drink instant.

Pressure, profiled header

When we designed the TWIST we knew we couldn’t take any shortcuts. It had to be able to operate flawlessly under pressure, extreme pressure.

Making espresso requires 135psi (pounds per square inch) or 9.3 bars of atmospheric pressure. That's the same as diving straight down to 262 feet, and it's also about 4 times the pressure of the air in a car's tire. If you've ever tried to use a bike pump to pump up you car's tires, you'll know why no similar device can really make espresso.

Pressure is required, and it's no good taking shortcuts. It's needed to force the water through, taking the essential flavors of the coffee with it. For years now the industry has used 9 bars as the standard, and more is definitely not better. You won't get better espresso with 16 bars or more, just as your car won't run any better with 4 times more pressure in its tires. There's a reason for that PSI. It's the perfect balance of pressure against coffee against the amount of water required for a shot.

How much is 9 bars in everyday terms? Well, across a standard 53mm coffee basket it’s equal to almost 300 lbs of force, held for 25 seconds. You can’t do that by hand and still pull consistent shots. We know. We’ve tried. So the TWIST uses small, standard gas cartridges that contain 600psi. These are the same chargers used to make whipped cream, and they have been in use for over 80 years. They contain nitrous oxide (N2O), the same gas with which bags of pre-packaged coffee are flushed in order to keep them tasting fresh. N2O is perfectly safe.

However, 600 psi is about four times too much, so our patent-pending pressure regulator steps it down to 135psi. It does it all automatically, so you can make one effortless espresso after another.

What’s the difference between consistent, regulated pressure and a manual solution? WIRED magazine rated the TWIST 9 out of 10 saying it produced “excellent, creamy espresso…thick rich brew as good as you get from a $2,000 counter-top machine”. Their verdict on a manually pumped system? “Air pressure drops as you pour…the resulting espresso is thin and bitter.”

The gas cartridges are small, affordable, 100% recyclable, and available practically everywhere, and as far as great quality espresso is concerned, they make a world of difference. Each cartridge makes up to 4 double or 8 single shots, with perfect pressure each and every time.

Temperature, to espresso, is everything. Too low and the extraction will taste sour and undeveloped. Too high and it becomes bitter and burnt. The recommended standard extraction temperature is 195F to 205F, or 90C to 96C.

How do you build temperature stability into a product that doesn’t have it’s own heating system? With great thermal mass comes even greater thermal stability. The refreshed TWIST’s water bowl provides plenty of mass—nearly 1lb of it in the form of a thick, strong metal inner chamber snugly fitted with a heat resistant outer layer of TPV. Bring it up to temperature and it will stay there for the length of the shot and beyond. The gray bands on the chart below show upper and lower limits of the recommended extraction temperatres. The diagonal line in the middle shows the temperature of the TWIST at the point of extraction in the basket itself after preheating for 30 seconds.temperature profile What's with preheating? It's the same as making a great cup of tea. You need to preheat the pot. Doing so is easy: just fill to the top with freshly boiling water, leave for 15 seconds and tip it out. Repeat if desired. The bowl will be toasty hot, and you’ll be ready to pull your shot. Fill with the water you plan to use, close the lid, pull the trigger, and in a few seconds you should have deliciously hot espresso pouring forth.

There is no need to pre-heat the TWIST after the first of several shots in a row. It stays hot and ready to pull one perfect shot after another.

For great coffee you can't beat great beans. And whatever beans you buy, the TWIST has you covered. Have a great grinder, or bought your beans from a caring café that grinds them just right? Use the professional (standard) basket to make a perfect shot. The TWISTs baskets, like most professional espresso machines, works with any amount of fresh ground coffee from 14-21g per double shot. These shots are so good, they'll make more expensive machines want to pack up their portafilters. (See the photos below, sent to us by a customer in Germany, to see why. Quite cremalicious.)

But you don't need to be an expert barista to start enjoying great coffee. The TWIST can also make the tastiest shots using regular beans you buy from a supermarket shelf, or even pre-ground ones that are too coarse for the regular basket. The TWIST’s pressurized basket will slow down the extraction, giving you the richest possible results. When you're traveling, try a hand grinder such as the Hario Skerton, or pre-ground beans with the pressurized basket, or switch over to the ESE pod adaptor so you can use convenient pods to make espresso with no fuss at all.

Recipes

Americano: the perfect morning cup
  1. Preheat your TWIST with freshly boiling water.
  2. Fill one or two coffee mugs (depending on how many you are making) with boiling water about 3/4 full.
  3. Empty the water used for the preheat and fill with the water for your shot.
  4. Pull the espresso directly on top of the water in the coffee mugs. It will drop in and the bubbles in the crema will then float it right back to the top, giving each cup a delicious, flavorsome crema-topped awesomeness.
  5. Add sweetener and milk or cream if desired and enjoy.

Twistini: the ultimate espressotiniTwistini
  1. Prepare standard filter basket with ground coffee. You will need a slightly coarser grind than when using water for the shot.
  2. Heat water bowl with boiling water.
  3. Heat vodka on stove. Take care you don't overboil or heat near naked flame.
  4. Dump water from bowl and replace with vodka.
  5. Pull shot directly into ice-filled cocktail shaker.
  6. Add other ingredients, shake or stir and serve in a fancy small shot glass or martini glass.

  1. Prepare coarse filter basket with red espresso.
  2. Cover ice in ice shaker with honey.
  3. Heat water bowl with boiling water.
  4. Heat 2oz of gin on stove. Take care you don't overboil or heat near naked flame.

  6. Pull shot directly into ice-filled cocktail shaker.
  7. Enjoy a delicious new cocktail, perfect for a warm summer's day.
